Surviving the Heat – Top Five Summer Cocktail Recipes

This is the best and most festive time of year. You basically have an excuse to drink cocktails anytime from 11am in my books. Hell, have a champagne cocktail for breakfast if you so desire! I recently came across Noble Spirits line of fair trade spirits. Today I’ve used their fair trade quinoa vodka and the goji liqueur. These are both such beautiful quality spirits that I had to share – and I absolutely love that they’re fair trade.  If you’re into raspberry liqueur of any kind, use the goji in the same way. It’s beautiful simply with lime and soda or mixed into something special. I won’t lie – I’ve been having it on the rocks with some fresh lime juice after dinner instead of dessert. AMAZE.

Here are five of my top cocktail recipes at the moment. Have some schmancy drinks this weekend and explore some new flavours.

 Tropical Icy Pineapple Delight

(serves 2)

1.5 cups frozen pineapple

60ml quinoa vodka (any vodka is fine)

20ml lime juice

30ml pineapple juice

2 tbsp rice malt syrup

fresh mint to serve

Blitz everything except mint in a blender until smooth and thick. Divide among glasses and serve with mint sprigs.

If you like coconut – add 1/4 cup coconut milk when blitzing for a creamier flavour. 

Goji, Balsamic and Rosemary Smash

(Serves 1-2)

1/2 lime

1/2 cucumber

fresh strawberries

1/2 tsp balsamic vinegar

1tbsp brown sugar

1/4 cup goji liqueur

1 sprig rosemary cut in half

Muddle 2 lime wedges, 2 1/2 inch rounds of cucumber, 2 fresh strawberries, 1/2 tsp balsamic vinegar and 1tbsp brown sugar in a cocktail shaker to release delicious juices.

Add 1/4 cup goji liqueur. Serve in an old fashioned glass over crushed ice with sprig of rosemary to stir. You can top this up with soda water if you’d like it long.

Goji and Lime Bubbles

(serves 2)

60ml goji liqueur

Champagne of choice

2 wedges of lime

Lightly mix liqueur and champagne and divide into two flutes. Add a gentle squeeze of lime. 

Classic Mule

(serves 2)

2 generous lime wedges

250 ml of ginger beer

60ml Frangelico

Build over ice with a squeeze of lime.  

Apple and Ginger Splash

(serves 2)

60ml quinoa vodka

250ml ginger beer

1/2 granny smith apple thinly sliced

1 tbsp finely sliced fresh ginger

2 lime wedges

Muddle ginger, lime and apple. Mix in ginger beer and vodka with a swizzle stick. Serve in two old fashioned glasses over ice.
